Ingredients
300g/10.5oz shrimp or prawn (peeled and deveined)
1 red bell pepper (sliced)
1 medium onion (sliced)
2-3 spring onions (cut into 2-inch pieces)
2 cloves garlic (sliced or minced)
1 tsp ginger minced
2 tbsp vegetable oil
Stir-Fry Sauce
2 tbsp light soy sauce
2 tbsp oyster sauce
½ tsp white pepper
1 tsp sugar ( optional )
2 tbsp water
Other ingredients
1 tsp sesame oil
1 tsp cornstarch (mixed with 3 tbsp water to make a slurry)
Marinade for Shrimp
2 tsp light soy sauce
1 tsp Shao xing wine or Japanese mirin
1 tsp cornstarch
1 tsp sesame oil
Instructions
1. Marinate shrimp with ingredients listed above. Let sit 10–15 minutes.
2. Mix Sauce ingredients in small bowl.
3. Stir-Fry: Heat oil, sauté bell peppers and onions for 1 minute, then remove and set aside. Add more oil to the pan, fry garlic and ginger briefly, then add shrimp and cook until just pink. Bring heat to high. Return veggies, pour in sauce, add cornstarch slurry, and cook until sauce is thickened. Stir in spring onions and a splash of sesame oil.
